Once the corrective action steps of the HACCP plan have been finalised it is then time to move to step 6 of the HACCP plan which is the verification phase.
In this step of the HACCP plan steps are put into place to ensure that everything is going according to plan. This step involves regular reviews of the HACCP plan, making sure that the plan is being followed correctly and that accurate records are being kept.
In this step of the plan it is also important to verify the initial plan to ensure that all hazards have been identified and that is implemented correctly that these hazards will be effectively controlled.
This initial verification step will ensure that the HACCP plan has been set up correctly and all potential danger areas have been identified and should be sufficiently controlled. After this initial verification is complete, subsequent verification procedures should be performed to ensure that the system is still working effectively.
This verification procedure should check the entire HACCP plan including diagrams, records and procedures. This should ideally be performed by an independent person to limit bias. This is obviously also quite a technical process and so the person performing this verification process should have the technical expertise to carry this out.
Once this step is complete, the final step of the HACCP plan can begin. In step 7 of the HACCP plan record keeping and documentation procedures are established.
