Once CCP’s have been established and monitoring processes for the CCP’s have been set it is then time to set corrective actions should any deviations occur.
As with all steps, the corrective actions are essential so that prompt action can be taken should any deviations occur in the monitoring procedures that were established.
As part of the corrective actions there are certain elements that should be considered. Firstly it is important to determine and correct the cause of the deviation. Secondly this step should include finding out the nature of the deviation. Lastly, step 5 of the HACCP plan should include methods of record keeping for corrective actions that were taken.
These steps should be put into place for each CCP in the HACCP plan. They should also be established in advance so that appropriate corrective action can be taken quickly if a deviation occurs. This record should also include who is responsible for taking corrective actions. It is important that the person who is assigned this responsibility has good knowledge of these processes and their consequences should any further steps be necessary.
Once the corrective action steps of the HACCP plan have been finalised it is then time to move to step 6 of the HACCP plan which is the verification phase.
